Pav bhaji is a street food of Mumbai but nowadays you can easily find street stalls selling pav bhaji in any city across India. Its a comfort food since lots of butter is used but at the same time it contains lots of vegetables so healthy as well. You can restrict use of butter to some extent if desired. It has a really awesome taste and personally its one of my favorite.
Ingredients
Butter 2 tablespoon
Onion 1 big
chopped
2 Green chilies finely chopped
Tomato paste 100
gms.
Mixed vegetables 200 gms.(Bean, Carrot, Cauliflower, Bell pepper and Green peas )
Garlic 3 cloves
Ginger garlic
paste 1 teaspoon
Turmeric powder
1/2 teaspoon
Red chili
powder 1 teaspoon
Salt to taste
Pav bhaji masala
4 teaspoon
Sugar 1/2
teaspoon
Lemon juice 1
teaspoon
Finely Chopped
coriander 2 teaspoon
For garnishing:
Chopped onion
Chopped coriander
Butter
Method
Bhaji:
Boil all the vegetables and drain excess water. Steam cook potato and mash it and keep these aside.
Heat butter. Put three cloves of chopped garlic. Saute for 20 seconds.
Now add chopped
onion and chopped green chilies. Cook for 3 minutes on medium flame.
Add
turmeric powder, red chili powder, salt, ginger and garlic paste, pav bhaji
masala and sugar. Add little water and cook for 2 minutes.
Add all the vegetables. Cook for another 3 minutes.
Now add tomato paste and lemon juice and further cook for 3 minutes.
Add mashed
potato. Cook on medium heat for 5 min.
Now slow the heat and start mashing all
the ingredients so that they get mix well together.
Add finely chopped
coriander, mix well and switch the heat off.
Bun(pav)
Slit each bun and apply little butter on inner sides.
Put
on pan to shallow fry.
Serve hot with
chopped onions, chopped coriander, a small block of butter, few slices of lemon and some chopped green chilies (if you wish).
P.S. You can always use chilies and salt as per your need. If you are preparing for kids use less chilies.
